My lunch.
I love bowls of food. Which is probably one of the big reasons why I love soups and stews so much. It's inherently comforting to me. And in my recent focus on healthy and inexpensive I've been assembling pretty and yummy things in a bowl like you see above. It has a similar effect that a bowl of soup has for me.What you see above is (from bottom to top) arugula, quinoa 'tinted' with turmeric (which is just quinoa cooked like on the package with a vegetable bouillon cube and a 1/2 teaspoon of turmeric), the sweet potato wedges, cucumber, home-grown cherry tomatoes (thank you, Husband!), drizzled with white balsamic vinegar, lemon juice and walnut oil. And then celery sticks with this phenomenal spread or pate made from sunflower seeds and walnuts. I make a big batch of this, keep it in the fridge and we eat on it all week with chopped veggies/crackers. It's delicious, and totally shines in the cheap/healthy categories. It's also raw and vegan if you're into any of that.
1/3 cups walnuts, soaked overnight
1c. sunflower seeds, soaked overnight
1 1/2-2 cloves garlic
1/2 tsp salt
3 TBS olive oil
1/8 cup lemon juice
1/2c. celery
2 green onions
1 TBS chili powder
1 TBS paprika
Blend ingredients in food processor or blender until smooth. Enjoy!
